I really like making this salad because it is so flavorful without being bad for you. The freshly made dressing tastes freshly made, and the mint really pops in the salad.


1/2 lb ground chicken
6 cups chopped Romaine
1/2 cup shredded carrot
1/4 cup sliced red onion
3 Tbl mint leaves, chopped
2 Tbl cilantro
handful cashews, lightly crushed with knife

4 Tbl fresh lime juice (juice two limes)
4 tsp fresh ginger
3 tsp honey
2 tsp chili garlic sauce
1/4 tsp salt

Cook ground chicken, and while chicken is cooking, combine dressing ingredients. Add 2 Tbl of dressing to cooked chicken to season. Toss lettuce with remaining dressing in a bowl, and once well dressed, add remaining vegetables. Plate tossed salad, and top with chicken and lightly crushed cashews (crush lightly on a cutting board with the side of a knife blade). Done!!
